    .mat files aren't the actual textures, it's more of a reference that point to where the actual texture is. Find where you have your unity project saved, and open the Assets folder and in the search bar put in .jpg, or .png or .bmp and you can find them that way. but you should be able to open them from unity. don't go to the material folder but find the actual texture folder for them.

    You can try this:

    Press Windows + R
    Searching appdata
    C:\Users\youruser\AppData\LocalLow\VRChat\VRChat\Cache-WindowsPlayer
    Open a folder
    Change the data name into: name.vrca

    Download AssetRipper for your system
    https://github.com/AssetRipper/AssetRipper?search=1
    When the program is installed click File
    Open file
    Open the .vrca file
    Export all files into a folder

    Create a new unity project
    In the assets right click
    Show in explorer
    Import the files within your asset folder into the unity asset folder

    Let everything load
    Drag the blue box into your Hierarchy

    From here you'd upload it but that's where I get stuck personally as the VRC SDK gets removed.
    Edit:
    This might just be the avatar I tried but I don't feel like trying anything more tonight.
    I think it has to do with missing scripts.

    I was having the same issue as you just use this drag the vrca file into asset ripper.exe then wait for it to say finished go into ripped and then exported projects https://github.com/AssetRipper/AssetRipper after you see all the files drag and drop them into your unity project you don't have to drag the scripts file into their unless you want to if you have issues with the avatar descriptor reimport your sdk
